Buffalo Hot-Wing Cheese Dip

There are dishes that you associate to events and this one ALWAYS makes me think of Football season and fall weather.

We make this dip whenever we host a football party or go to a football party. 

It has never failed to wow us and our guests or hosts. You should print up a couple recipe cards to go with this so that you can give them out, because people will usually ask for the recipe.

I’m convinced you could dip a shoe in it and it would taste good – but typically, we just use celery and baby carrots. And tortilla chips or corn chips.

I’ve seen altered versions of this that add Blue Cheese as well. You can do that, I’m not usually a big fan of Blue Cheese but it would probably taste good if you like that.

Warning: This version is on the spicy side. You can adjust it to your taste if you can’t handle the heat.

Good 'till the last drop - this favorite appetizer for Football season is always a huge hit! Serve immediately or keep it in the crock pot all day - it just gets better and better.

Ingredients

  • 1.5 lbs small cubed chicken breast
  • 1/2 cup Red Bell Pepper, finely chopped
  • 1/2 cup yellow onion, finely chopped
  • 16 oz cream cheese, cubed
  • 8 oz white extra sharp Cheddar cheese, shredded
  • 3/4 cup Frank's Red Hot Wing Hot Sauce
  • 1 cup Hidden Valley Ranch Black Peppercorn Ranch Dressing
  • 1-2 tbsp Olive Oil

Instructions

  1. Heat Olive Oil in a large skillet and saute chicken, onion, and bell pepper over medium high heat until nearly cooked through.
  2. Add hot sauce and reduce heat to medium, until completely cooked.
  3. Stir in cream cheese and ranch dressing.
  4. Cook, stirring until well blended and warm.
  5. If putting in the crock pot, mix in half of the shredded cheese, and transfer mixture to slow cooker. (Otherwise, cook all of it together)
  6. Sprinkle remaining cheese over the top, cover, and cook on low until hot and bubbly.
  7. Serve with celery sticks and crackers or white corn tortilla chips
